Quick Route To ‘Success’

The first five industry-ready graduates in an innovative and unique chefing programme, ‘Quick to the Cut’, graduated from this exciting course on Tuesday 10th June at Macdonald Aviemore Highland Resort.

Until just 12 weeks ago each recruit had been unemployed for at least 6 months. They have experienced training and development across 4 different kitchens at Aviemore Highland Resort, been formally assessed and achieved an SVQ level 2 in Food Preparation and been guaranteed an interview with Macdonald Hotels.

This course was designed as a response to the high number of chef vacancies across the Highlands & Islands and Scotland as a whole.

The programme has already been recognised for its innovative practices by being Highly Commended by the judging panel of the Highland Diversity Awards and being put forward to the Scottish Qualification Authority (SQA) as a model of best practice.

The first intensive programme of its kind in the country, Quick to the Cut has clearly demonstrated that it is possible to achieve a level 2 qualification, gain practical experience and be industry ready in just twelve weeks.

The Quick to the Cut model is the result of collaborative working between Springboard Scotland, Centre for Applied Tourism and Hospitality Management (CATHM) and The Highland Employer Coalition. The European Social Fund, Highland Employer Coalition and the Department for Work and Pensions funded the programme.

Roisin Taylor, Highlands & Islands Operations Manager from Springboard Scotland said: ‘The development, partnership approach and implementation of this programme has been extremely exciting. It is fantastic to see that the programme is receiving a lot of positive comments and hopefully the programme graduates will have successful careers in the industry as chefs’

Dr. Craig Thompson, Managing Director of Centre of Applied Tourism and Hospitality Management based at Aviemore Highland Resort said, “We are absolutely delighted with the success of the inaugural Quick to the Cut programme. Macdonald Hotels is committed to the development of people through training and the enthusiasm and determination to learn and succeed demonstrated by the students has been inspiring. I would also like to thank our own in-house catering team for embracing what has been a very successful course.

“By providing this scheme at the Resort we can ensure trainees receive proper training within a quality hospitality environment, enabling them to secure recognised qualifications and apply the skills they have learnt when going for jobs in the area.”

Background information:

• The ‘Quick to the Cut’ programme is a 12-week residential chef-training academy based at MacDonald Aviemore Highland Resort. To apply for the course the candidates have had to be unemployed for at least six months and have an interest in chefing as a career. The candidates’ experienced working, living and training in an industry environment, which prepares them for the world of work.

• Springboard UK is primarily an education charity that aspires to help people of all ages, the unemployed and the disadvantaged into work or training in the Hospitality, Leisure, Travel and Tourism industries.

• CATHM – Centre of Applied Tourism & Hospitality Management is the UK’s first industry driven education and training centre. The Centre is founded on Swiss hotel school expertise and fully supported by Macdonald Hotels, Scotland’s leading hotel company. This powerful combination means that CATHM is able to offer professional programmes with an unrivalled degree of application …and that graduates of CATHM will be better prepared for working in, managing and leading the dynamic hospitality and tourism sector.

• Highland Employer Coalition – The Highland Employer Coalition offers employers an opportunity to influence the employment market, have their voice in the employment arena, develop and shape employment opportunities and avail themselves of additional recruitment options.

Our purpose is to bring a business perspective to the design and delivery of Welfare to Work strategy, by supporting methods of preparing people to move into work, and are keen to engage with any initiative that can open job opportunities for the many people who are regarded as being quite removed from the employment market, such as those currently receiving benefits, lone parents, long term unemployed or ex-offenders
More specifically, the Coalition actively

– engages with employers to reflect their viewpoint in optimising job and career opportunities for people of working age in our community, who are not currently in employment.
– strengthens the connection between the needs of employers and training provision generally
– helps to improve the knowledge of the local labour market and recruitment requirements for Jobcentre Plus staff.
– promotes fair and effective recruitment and best practice in retention amongst local employers.
– establishes links between local regeneration projects and employment programmes.
– serves as a catalyst for innovation and excellence.

• Highland Diversity Awards – The Highland Employment Network (HEN) is the body responsible for the development of the Highland Diversity Awards. May 2008 saw the first awards ceremony of this kind. The purpose of the awards are to demonstrate examples of successes for people who have experienced barriers to employment returning back into the world of work. The awards were to acknowledge those employers who are prepared to break down the barriers to work and invest in their most valuable asset, their workforce. There were four categories and the Quick to the Cut programme was a finalist in the ‘Excellent Recruitment Practices, Policies and Procedures’ category.
